Chicken Chukka Ingredients

Coconut Milk / Thengai Paal – 1 to 1/4 Cup
Onion / Vengayam – 3 (chopped finely)
Tomato / Thakkali – 1 big or 2 medium sized (chopped)
Ginger / Inji – 2 tbsp (chopped)
Ginger Garlic Paste / Inji Poondu Paste – 2 tbsp
Green Chili / Pachchai Milagai – 3 to 4 (slited)
Curry Leaves
Coriander Leaves – a handful
Sea Salt / Crystal Salt / Kal Uppu – to taste

For Marination

Chicken (bones or boneless) – 3/4kg
Turmeric Powder / Manjal Podi – 1/2 tsp
Lemon Juice / Elumichai Chaaru – 1/2 of a lemon
Ginger Garlic Paste – 1/2 tsp
Sea Salt / Crystal Salt / Kal Uppu – 1/2 tsp

Spices For Tempering

Sesame Oil / Nallennai – 6 to 8 tbsp
Bay Leaf / Birinji Ilai – 2
Cloves / Kirambu – 8
Cinnamon / Pattai – 2 big pieces
Star Anise / Natchathira Sombu – 2
Fennel Seeds / Sombu / Perunjeeragam – 1 tsp
Cardamom / Elachi / Elakkai – 2

Masala Powders or Spice Powders

Red Chili Powder / Vaththal Podi – 1 tbsp
Coriander Powder / Malli Podi – 1 tbsp
Turmeric Powder / Manjal Podi – 1/2 tsp
Garam Masala Powder – 2 tsp
Cumin Powder / Seeraga Podi – 1 tsp
Fennel Powder / Sombu Podi – 2 tsp
Kashmiri Chili Powder – 2 tsp

How to prepare chicken chukka dry fry using coconut milk with step by step pictures

1. Firstly, clean and wash chicken thoroughly in water with a little amount of turmeric. Then,marinate the chicken along with the things given under the ‘for marination’ table for at least 30 minutes to 1 hour. While the chicken is marinating,get ready with other ingredients.

2. After 30 minutes, heat 6 to 8 tbsp of sesame oil in a pressure cooker.When it is hot,add bay leaf and all the spices given under the “spices” table and saute for few seconds.

3. Then, add chopped ginger and saute well.Add curry leaves ,let it splutter.(I forgot to add now so I added in step 7).

4.Now, add chopped onions (I used big onions as I didn’t get small onions.Use 11/2 cups of chopped small onions if you have.It will give more taste to the chicken chukka) and saute until light brown color.

5.Add ginger garlic paste and saute until the raw smell goes off.

6.Add chopped tomatoes and green chili now and saute for 2 minutes.

7. Add lots of curry leaves and stir it well.

8.Now add all the spice powders given under the “masala powders” table.

9. Saute it until oil leaves the sides of the pan.

10.Add marinated chicken and mix well.

11. Close the pressure cooker and allow it to whistle for 1 time.Switch off the stove and let the steam escape by itself.Open the lid when all the steam released.

12.For quick sauteing

To make the sauteing process quickly,I transferred the chicken to the another wide pan.

13.Now, add 1/4 cup of coconut milk at a time into the chicken.

14. Stirring often until the mixtures gets dried off. Then add another 1/4 cup of coconut milk and repeat the same process until all the coconut milk finished off.
