Ingredients ( 1 Cup = 240 ml, 1 tbsp = 15 ml)

Mushroom / Kalaan – 230 gms
Sesame Oil / Nallennai – 3 tbsp + 1 tbsp
Bay Leaf / Biryani Ilai – 1
Fennel Seeds / Sombu or Perunjeeragam – 1/2 tsp
Curry Leaves / Karivepilai –  1 or 2 springs
Small Onions / Chinna Vengayam – 1/4 Cup / 40 gms
Tomato / Thakkali – 1/4 Cup / 50 gms
Ginger Garlic Paste / Inji Poondu Paste – 1 tbsp
Turmeric Powder / Manjal Podi – 1/4 tsp
Coriander Powder / Malli Podi – 1/2 tsp
Red Chili Powder / Milagai Podi – 1 tsp (adjust)
Kasuri Methi Leaves / Dried Fenugreek Leaves / Venthaya Ilai – 1 tsp (crushed)
Sea Salt / Kal Uppu – as required
Water – 11/4 to 11/2 cups

To Grind

Cinnamon / Pattai – 1
Cloves / Kirambu – 3
Star Anise / Natchathira Sombu – 1 small
Fennel Seeds / Sombu – 1/2 tsp
Cumin Seeds / Seeragam – 1/2 tsp
Pepper / Milagu – 11/2 tsp
Coconut / Thengai – 2 tbsp (chopped)
Small Onions / Chinna Vengayam – 1/4 Cup / 40 gms
Tomato / Thakkali – 1/4 Cup / 50 gms

1. Heat a pan with 1 tbsp of sesame oil.

Notes

You can replace with coconut milk instead of adding water for extra flavor.
